Cellobiose (glucose-glucose with a beta-1,4 linkage) is a unit of cellulose and lichenin. It can be obtained by enzymatic or acidic partial hydrolysis of cellulose. Cellobiose has eight alcohol groups and three ether linkages, resulting in strong dipole-dipole force (hydrogen bonds). Octaacetated cellobiose is soluble in nonpolar organic solvents due to no hydrogen attraction.
