GENERAL DESCRIPTION & APPLICATIONS

Disaccharide is a sugar (a carbohydrate) which yield two monosaccharide units upon hydrolysis. Disaccharide generally has a hydrogen to oxygen ratio of 2:1. The two monosaccharides are bonded via dehydration which leads to the loss of a molecule of water. Sucrose is one of the most common disaccharide used as a sweetener in food. It is joined by a glycosidic bond between glucose and fructose with an alpha(1→2) linkage. It is obtained from sugar cane or sugar beet and then purified and crystallized. Cellobiose (glucose-glucose with a beta-1,4 linkage) is a unit of cellulose and lichenin. It can be obtained by enzymatic or acidic partial hydrolysis of cellulose. Cellobiose has eight alcohol groups and three ether linkages, resulting in strong dipole-dipole force (hydrogen bonds). Octaacetated cellobiose is soluble in nonpolar organic solvents due to no hydrogen attraction.
